Delicious Rabri Recipe: How to Make Thick and Creamy Rabri

Rabri is a rich, creamy dessert that is beloved in both India and Pakistan. Made by reducing milk to a thick, creamy consistency, this dessert is flavored with cardamom and saffron, making it an aromatic and delightful treat. Here’s a step-by-step guide to preparing Rabri recipe at home:

Ingredients:

  • 2 liters full-fat milk
  • 1/2 cup sugar
  • 1/2 teaspoon cardamom powder
  • A few strands of saffron
  • Chopped nuts (almonds, pistachios) for garnish (optional)

Instructions:

  1. Boil the Milk:
Pour the full-fat milk into a heavy-bottomed pan. Bring it to a boil over medium heat, stirring occasionally to prevent it from sticking to the pan.
  2. Simmer and Reduce:
Once the milk starts to boil, reduce the heat to low. Let the milk simmer gently, stirring occasionally to prevent it from burning. As the milk simmers, a layer of cream will form on the surface. Gently push this cream layer to the sides of the pan using a spatula.
  3. Scrape and Stir:
Continue simmering the milk for about an hour or until it reduces to about half of its original volume. Frequently scrape the cream layer from the sides and stir it back into the milk to achieve the desired thick and creamy texture.
  4. Add Sugar and Flavorings:
Once the milk has reduced significantly, add the sugar and stir well until it is completely dissolved. Then, add the cardamom powder and saffron strands. Mix well to distribute the flavors evenly throughout the thickened milk.
  5. Thicken the Rabri:
Allow the milk to continue simmering on low heat for another 30 minutes or until it thickens further and attains a creamy, rich consistency. The longer you let it simmer, the creamier and more flavorful your Rabri will become.
  6. Cool Down:
Turn off the heat and let the Rabri cool down to room temperature. This will allow the flavors to meld together beautifully.
  7. Garnish and Chill:
Once cooled, transfer the Rabri to a serving dish. Garnish with chopped nuts like almonds and pistachios for added texture and flavor. Place the Rabri in the refrigerator and chill it for a few hours before serving.
  8. Serve and Enjoy:
Your delicious homemade Rabri is ready to be served! Enjoy this creamy, rich dessert chilled, either on its own or as an accompaniment to other traditional sweets.

Tips:

  • Consistency: The key to perfect Rabri is consistency. It should be thick and creamy. Make sure to simmer it on low heat and keep scraping the sides for a rich texture.
  • Sweetness: Adjust the amount of sugar based on your taste preference. Some prefer a sweeter Rabri, while others enjoy it less sweet.
  • Flavor Enhancements: You can also add rose water or kewra essence for an extra layer of fragrance and flavor.
